I have been doing awful in keeping up the Paleo diet this last week… I am eating anything in sight that has sugar in it. In an attempt to get back on track I knew I had to make a real dinner.
This recipe is really easy to throw together, I did not even miss the noodles or cheese.
1lb. Ground Beef
28 oz. (two cans) Diced Tomatoes (drained)
6 oz. Tomato Paste
Garlic (as much as you like)
Any Spices you want ( I used pepper, basil, and oregano)
Step one: Cook the onions, garlic, and meat in a pan. Once the meat is thoroughly cooked, add in the tomato paste, diced tomatoes, and your spices. I allowed these to cook together for about 10 minutes.
Step Two: While the meat was cooking, I cut up my zucchini into thin (about 1/4 inch) circles to act as the noodles.
Step three: Spread the zucchini out on the bottom of a 13×9 pan to be the first layer of the lasagna. Then the meat layer, then zucchini, and so on until you are out of food. End with the meat layer being on top (I did not have enough to cover it all the way, and it turned out fine).
