Paleo Berry Bars

These berry dessert bars are something I originally saw on  Go check it out, there are so many great recipes! I had to make a few changes in this recipe due to just differences in ingredients, and it is one of the best things I have ever eaten!!

To start, there are three different layers in this bar.  The crust, the berry filling, and the crumbly topping.

The Crust: 

Mix the crust ingredients together until it forms a dough.


Then, put the dough in a 8×8 pan and flatten it to cover the whole bottom & cook at 350 degrees for 12 minutes.  Allow to cool completely and set aside

ImageThe Berry Filling:

Have 10 oz of the berry of your choice ready (mine were frozen mixed berries) and a 1/2 C of honey.  Melt the honey, and bring to a boil.  Once it is at a boil, reduce heat and let simmer for 5 minutes.  At this point you can add your berries and vanilla in and cook on medium heat for 12-15 minutes (but no more than 15 minutes or it will not thicken properly)

ImageImageAfter the 15 minutes is done, transfer mixture into a glass bowl, and cool in fridge

ImageThe Crumb Topping:

Put all ingredients for topping into a food processor and mix up until the consistency you would like.


This stuff was so good, I had a hard time not eating it all just like that. haha

Putting it all together! 

At this point you should have a cooled crust, a cooled filling, and a crumb topping.  Just pour the berries onto the crust and spread evenly.  Then sprinkle the crumbs over the top.

ImageCook at 350 degrees for another 15 minutes.

Allow to cool (I put in fridge again) before serving, and it did thicken up while in the fridge, which made it perfect and easy to cut!

2 C. Almond Flour

2 T. Coconut Oil (melted)

1 T. vanilla extract

1 T. Water

1/4 t. Sea salt


10 oz. Berries

1/2 C. Honey

1 t. Vanilla Extract


1 C. Walnuts (I am going to use almonds next time, I think that would be good too)

1/2 C. Unsweetened shredded coconut

2 T. Honey

1 T. Coconut Oil (melted)

1/4 t. Sea salt

1/4 t. Almond extract
