Paleo Cilantro/Lime Chicken with Avocado Salsa

This recipe will require the chicken to marinate for a few hours, so plan ahead!

Ingredients to marinate the chicken:

2-3 Skinless/Boneless Chicken Breasts

2 T. (or as much as you like) Fresh Cilantro

Lime Zest and Juice

1.5 T. Olive Oil

Sea Salt and Pepper

Mix them all together and let marinate for a few hours

When ready to cook, pour contents into a pan and cook over medium heat until done.

ImageWhile chicken is cooking, prepare the Avocado Salsa.

You will need:

 Avocados

Cilantro

Onion

Tomato

Juice of a lime

sea salt and pepper

I had pre-cut all the ingredients and combined them into a bowl.  I poured the lime juice on right before serving.  Get creative with your ingredients.  Use whatever you like and as much as you like of each.  Image

This recipe only took about 10 minutes to prepare and about 15 minutes to cook, and fed four adults
