Paleo Mini Turkey Meatloaf & Mashed Cauliflower

One major reason I love Paleo is because it forces me to add protein to my meals.  Prior to starting this eating change over a month ago, I rarely ever ate any meats.  Now, I have been eating a lot of chicken, ground turkey, and even some elk meat.  I am trying to add more variation to my meals over the next few weeks so that I do not get bored, like fish or pork. Honestly, I love the way the extra protein makes me feel full and I do not hardly ever feel hungry when I am following the Paleo diet to a tee…

When I was growing up, my  mom prepared mashed potatoes with just about everything… So, in my head I have connected meats with mashed potatoes.  I have replaced that with different veggies every night, but I still miss them.  I read and heard that mashed cauliflower is even better… so I had to try it out.  I didn’t think I even liked cauliflower, but when you know what your eating is healthy and good for you, I tend to ignore those other thoughts….and I loved them.

Anyways, here is the recipe for this super easy meal!

Ingredients for Turkey Loafs:

Approx. 1 lb. of Ground Turkey

Veggies (I used onion, zucchini, and some orange bell peppers)

1 Egg, lightly whisked

Pepper and a little Sea Salt

Get creative here, I am a very boring eater… So add as many veggies as you want or other spices that you love

Directions:

1. Mix it all together, and place in a pan.  I used a mini-bread loaf pan. Image

2. Cook these at 400 Degrees for about 25 Minutes.

I did not need to grease the pan or anything prior, and the loafs popped right out.  However, if you do not trust your pan, use some paleo friendly oil-spray to lightly coat your pan.

Ingredients for the Mashed Caulifower:

1-2 heads cauliflower

Garlic (as much as you like)

Spices (I used basil, oregano, garlic powder, sea salt, pepper)

I did not measure anything out… I just mixed and tasted

Directions:

1. To start, cut up your cauliflower

2. Put them in a steamer, and I left them in there until a fork easily went through them.  ( I found the moister your cauliflower, the creamier it is when “mashed”

3. Take them out of the steamer, and put them into a food processor. I let it run until the cauliflower was the consistency I wanted.  Then I emptied it into a bowl and mixed in all my spices from there.Image

  1. I’ve heard a lot of good things about substituting cauliflower for mashed potatoes or rice, but I have yet to try either. Your dish looks amazing though, so I should probably try it soon! Can you use frozen cauliflower, or does it have to be fresh?
