My family has a crock pot that I think we should use way more often. Crock pots are awesome and it is so nice when you find recipes that you can just throw all the ingredients together and come home to a great dinner. I think everyone would agree with that.
I went searching google for some ideas and decided on paleo chicken enchilada stew. This is one of those meals that is even better the next day! I found it on Paleomg.com and only omitted or changed up a few ingredients.
Ingredients:
2-3lbs chicken breasts (I had closer to 3lbs.)
1 Onion, chopped
1 Bell Pepper, chopped (I used orange)
1 can Rotel
1 can Diced Tomatoes
1 can Tomato Sauce
Garlic (to your preference)
Chili Powder (I used very little, I can’t handle hot stuff)
Oregano (to your preference)
Cilantro (to your preference)
Salt and Pepper
Avocado, to garnish
Directions:
1. Put chicken, spices, and all the cans in the crock pot. (Everything except the avocado)
2. Cook for 8-10 hours on low or 6-8 hours on high. When chicken is cooked through, shred the chicken. I just use two forks and then dinner is served.
I think homemade Paleo tortillas/chips would be great with this meal!
I just added the avocado on top.
