It’s been awhile since I have posted any recipes! I am really trying to get back into eating mainly paleo meals. I have no excuse to be lazy and I want to start treating my body right again! Expect more healthy recipe posts soon!
This is a great treat to get myself back on track. Instead of reaching for a bowl of cereal, chips, or anything else packed with bad sugars and fats that I CRAVE… I will reach for these the rest of the week.
Ingredients:
- 1 C. Almond Flour
- pinch of sea salt
- 1/8 t. Baking Soda
- 1/4 to 1/2 t. Cinnamon
- 3 T. Melted Coconut Oil
- 2 T. Honey
- 1-1/2 t. Vanilla
- 1 T. Water
- 2-3 T. Peanut Butter Chips or Dark chocolate
After I had already put these in the oven, I thought about how delicious they would be with apple. Next time I will put them in the cookie, cut up. However, the apple was still nice on the side.
1) Preheat your oven to 350 degrees
2) Mix the dry ingredients together (almond flour, salt, baking soda, and cinnamon
3) Mix in the wet ingredients (honey, coconut oil, vanilla) and then stir in the extras (chips)
4) Lightly grease the pan and bake for 8-10 minutes or until the edges are golden brown. Then let them sit for 3-5 minutes to firm up
This made 12 cookies and took a total of 15 minutes! Next time I will be doubling the recipe because they are so good!
I really want to try these! Being a few out here?!? Or bring me the almond flour, as I cannot find ANY out here! :-(
