Paleo Chocolate Cake with Strawberry Filling and Chocolate Icing

I love having days off work. I was scheduled for two hours today… ya two hours?!?! I luckily got out of it, and I made a cake! This was my first time making a paleo cake, and I wanted to get a little fancy with it.

Chocolate Cake Ingredients:

  • 2 C. Almond Flour
  • 1/2 C. Coconut Flour
  • 3/4 C. Cocoa Powder (Leave out for plain cake)
  • 1/2 t. Baking Soda
  • 1/2 t. Sea Salt
  • 1/2 C. Honey
  • 6 Eggs
  • 4 T. Coconut Butter
  • 2 t. Vanilla
  • 1-1/4 C. Almond Milk (I used vanilla since that is what I had)

Mix all your dry ingredients together, then mix all your wet ingredients. Combine.

Pour batter into 2- 9″ cake pans and bake at 350 degrees for about 30 minutes or until toothpick comes out clean.

photo 4-1Take out of pans to let cool completely. Place in fridge to speed this up. While cake is baking, prepare your filling.

Strawberry Filling Ingredients:

  • 1-2 C. Cut up Strawberries
  • 1/2 C. Water
  • 1/4 C. Honey

Mix all ingredients into a sauce pan and cook on medium heat for 10-15 minutes or until most of the water has evaporated. Then place in fridge to cool and thicken a little.

Chocolate Icing Ingredients:

  • 1/2 C. Coconut Butter, melted
  • 1/4 C. Honey
  • 2 t. Vanilla
  • 3/4-1 C. Cocoa Powder
  • 1/2 C. Coconut Milk

Mix all ingredients together! Very easy

Decorating!!

This is the best part. Once cakes are chilled (for icing to spread nicely and smoothly) Pull them out and pour the strawberry filling in between the two layers and cover the whole thing in icing. This is when I just put cut up strawberries around the edges, nothing too fancy. It is delicious! I honestly could not believe it was all Paleo.
