The most popular post on this site, by far, is the paleo pancakes, thanks to pinterest, and all you lovely readers that keep coming back. It is just a simple recipe and is so easy to make. I thought I would make a different version of the same pancakes for you guys that is just as simple. I hope you enjoy!
Ingredients:
- 3 Eggs
- Cinnamon (as much as you prefer)
- Berries, about a cup (I used strawberries and blueberries)
- 1 Banana
- Heaping T. Almond Butter
I do not ever really measure, so I apologize for the guesses. However, you cannot really mess it up!
Directions:
- In a food Processor, blend together the berries and banana
- In a bowl combine the other ingredients
- Add them together
- Cook! We had my skillet set to 350 degrees, and then cooked like you would any other pancake!
- They were sweet enough, I did not even need any sort of syrup!

Are you sure this is the entire recipe? I just tried them and they don’t look anything like the picture. I’ve made paleo pancakes before and they usually call for a little bit of coconut flour and baking soda…
I just threw things together to make up the recipe, so ya I’m sure….
Add whatever you want, but this worked fine for me, an every other paleo pancake I’ve ever made.
How many pancakes does this recipe make? And how long will they last in my fridge, or can I freeze them? I want to make a big batch so I can have breakfast for the week.
This made about 9-10 thin pancakes, and I froze mine and they were fine. I ate them within a week, so any longer than that I am not sure!
Have you tried these with frozen berries before? I hardly keep fresh berries on hand unless they are in season, so I’m wondering how that would work…
I don’t see why it wouldn’t work. Since I put then in the food processor, if was just small bits. I don’t think it would work as well if you used whole frozen berries though.
