Who is ready for some more Pumpkin! Now, these are NOT paleo, but they are one of my families favorite things to make this time of year. I brought some to work, and they were gone from the break room before I even clocked in.. They are that good! :) Besides, sometimes you just need a non-paleo treat! :)) I am sure it would not be hard to paleo-fy this! Let me know in the comments, if you try it!
Ingredients: Pumpkin Bars
- 4 Eggs
- 1 C. Oil
- 2 C. Sugar
- 1-15 oz. Pure Pumpkin
- 2 C. Flour
- 2 t. Baking Powder
- 1 t. Baking Soda
- 1/2 t. Salt
- 2 t. Cinnamon
- 1/2 t. Ginger
- 1/2 t. Cloves
- 1/2 t. Nutmeg
Cream Cheese Icing
- 1- 6 oz. Cream Cheese
- 3/4 Stick Butter
- 1 T. Milk
- 1 t. Vanilla
- 1-2 C. Powdered Sugar
Directions: Pumpkin Bars
- Preheat oven to 350 degrees
- Mix together the first four ingredients
- Add all the dry ingredients and blend well
- Pour into a 12″x18″x1″ greased pan.
- Bake for 25-30 Minutes
- Remove from oven and allow bars to cool all the way before applying icing.
Cream Cheese Icing
- Mix together the first four ingredients,
- Then slowly add the powdered sugar to your preferred sweetness. The more powdered sugar you add the firmer the icing will end up being. I used closer to 1.5 C. total
- Once bars have cooled, spread on icing!
- EAT!
