Paleo | “Sugar” Cookies

I do not know why I love Valentine’s Day so much.  I am not one for over the top, romantic dinners or flowers and chocolate, but I still love the holiday.  I like giving the people I love a nice reminder that I love them, and I am lucky to have them in my life. Plus, it is an opportunity for a theme… and this girl loves a theme.  Can you say hearts? Hearts, everywhere.

These cute little heart cookies are perfect for Valentine’s Day, or just to satisfy a sweet tooth. I found the recipe here, and adapted it a bit. I changed the dough recipe a little, and did not use the frosting recipe listed, but keep reading to see what I used!

Cookie Dough- makes 2 dozen

  • 2 1/2 C. Almond Flour
  • 2 T. Honey
  • 1 Egg
  • 2 t. Melted Coconut Oil
  • 1/2 t. Vanilla
  • 1/2 t. Baking Soda
  • 1/4 t. Sea Salt
  • Coconut Flour, for dusting


  • 8-10 Strawberries
  • 1 Banana


Preheat oven to 350 degrees

Mix together all the ingredients.  I used a hand mixer, and it looked crumbly.  However, when you mold it with your hands, it will stick together like normal sugar cookie dough. photo 2

Set in the fridge to chill for about 20 minutes.

Use two pieces of parchment paper to roll out the dough. Use coconut flour to prevent sticking (I had no problem with sticking). Roll it to be about 1/4″ thick and use your cookie cutters until you have no dough left. I got about 24 cookies.paleo sugar cookie

paleo sugar cookiePlace cookies on cookie sheet lined in parchment paper or a greased cookie sheet. paleo sugar cookieBake for 7-8 minutes.paleo sugar cookieWhile the cookies cool, make the “frosting” spread.  Note: I did not want to cover every cookie, so I used about 4 strawberries and a half a banana. This still made plenty.

Using our Nutri-Bullet, I added in the fruit and let it run for 1-2 seconds, but if you do not have one, just mashing up the banana and strawberries with a fork would suffice. paleo sugar cookieAfter the cookies were cool, I spread the fruit mix on a fewpaleo sugar cookie

photo 3-5These cookies were soft and the strawberry banana spread was the perfect topping.  It did not leave the cookies feeling mushy either. Plus, they kept nicely in tupperware.  A perfect paleo cookie! paleo sugar cookieThese would make a great treat for anyone special in your life!
