Banana Muffins

Happy Saturday!

We keep buying bananas and then not eating them through out the week, which means… bake something with bananas so they don’t go bad.  Muffins are the easiest to me because you can grab and go.

Recipe:

  • 2C Flour
  • Chocolate Chips or Nuts, either mixed in or added on top prior to baking (Optional)
  • 3/4C Sugar
  • 3/4t Baking Soda
  • 1/2t Salt
  • 2-3 ripe bananas
  • 1/4C plain or vanilla greek yogurt
  • 2 eggs
  • 6T Butter, soft
  • 1t Vanilla Extract

Directions:

Mix together the dry ingredients in a bowl

In a separate bowl, combine the wet ingredients

Slowly add in the dry to the wet and beat until combined

Bake for 20-25 minutes at 350 degrees

 

Super easy, and I was able to use up the bananas before they went bad.  Love not wasting food!
